Kilawin na Isaw


Another one of  my cousin Mark's pulutan specialties---Kilawin na Isaw (pork intestines).  An uncle butchered a pig during a family reunion, and Mark was assigned to take care of the pulutan.  I never had Kilawin na Isaw in a long, long time.  For obvious reasons, I prefer not to eat this dish when I don't know who prepared it.  What my brother said years ago is forever etched in my mind---baka galing sa Araneta Avenue yan! (LOL)  

This was a hit to all beer drinkers in the family including yours truly.  My mom and an aunt needed to be reminded of their uric acid levels.

For the adventurous, here's how Mark prepared this kilawin:
  • Pork large intestines were cleaned with lime and salt to eliminate odor and thoroughly washed
  • Then boiled in ginger and lemongrass for 10-15 minutes, drained and washed in cold water
  • Boiled again with ginger, salt and pepper until pork intestines were tender
  • Sliced (bite-size) and mixed with onions, ginger, unripe tomatoes, coconut cream and coconut vinegar (black beans, pineapple chunks are optional)
  • Salt & pepper to taste
  • Hot chili peppers (optional)
  • Garnished with crushed salted peanuts and raisins (adding raisins was my idea :p)
  • Chilled
If you're not into pork intestines, you can use pig's ears and cheeks.:p

Breakfast of Champions

I don't know about you but I am always hungry when I'm on vacation, especially at the beach.  I have always been a late riser that breakfast is either rushed or skipped.  But when I'm on vacation, I look forward to late, slow and heavy breakfast to get me going.

This was our breakfast when my friends and I were in Subic recently.  We had a 7-year old bodyguard---the corned beef omelet and Spam were prepared for her.  The fried tuyo was a special request by yours truly. Since mom's elevated BP in December, there has been a total ban on all kinds of dried fish at home as well as bagoong, and fish sauce---my mom's favorite side dishes.  

These were the answers to my salt craving.

   

Still smacking my lips thinking about fried tuyo dipped in spicy vinegar, fried rice and brewed coffee.  I know I should stay away from salty foods, and I am really trying.:p

Lunch @ North Park


Fast, affordable and filling lunch at North Park.  I had time for a long lunch but U needed to get back to work, and  we picked the right place.  We had yang chow fried rice, fried calamari and this tasty beef with broccoli and 3 kinds of mushrooms.  I had the urge to go to sleep after this meal--I guess I ate too much fried rice.:p

Kani Salad


This is one salad that I associate with summer---orange, green, bright and juicy.  A serving of chilled Kani Salad is refreshing on a balmy summer afternoon. A combination of crisp lettuce, cool ribbons of cucumber, ripe mango, kani kama (imitation crab sticks), zesty Japanese mayo, drizzled with Tobiko (orange-colored flying fish roe).  It's a contradiction of textures yet flavors blend together in harmony. It's light but filling.

Jesse James Sampler


A favorite appetizer at Texas Roadhouse Grill---Jesse James Sampler.  A medley of mildly spiced buffalo wings, hand-battered fish fillet and jack cheese with 3 sauces for dipping.  This was great with ice cold Tanduay Ice.

Fried Noodles

A friend celebrated her birthday recently and six of us were treated to a scrumptious dinner at Mann Hann.  And as tradition goes, plates of birthday longevity noodles were served to go with our wishes of long life and good health.  This was delicious!

Oriental Chicken Salad

Met two friends friends for dinner recently at High Street.  I had this Oriental Chicken Salad for starter but decided to skip the main course and went straight for dessert.  The grilled chicken was tasty, loved the crisp salad greens, crispy noodles and tangy sesame-ginger dressing.  A delicious, healthy meal.  
I had frozen yogurt for dessert.:p

GoodAh's Classic Goto


If you remember a light aircraft that crashed in Paranaque in early December, it was more or less a kilometer away from GoodAh.  I was on my way home when it happened and the traffic was just horrible.  GoodAh was a lifesaver---I was having this Goto while firetrucks and ambulances rushed to the scene of the crash.

Goto is a Filipino version of Congee, it has tripe, pork cracklings, ginger, fried garlic, boiled egg and green onions.  I had tokwa't baboy as a side dish.

Tinomok


This dish was a hit to my siblings.  It's probably the hunger generating spicyness and nostalgia-inducing coconut milk.  It's called Tinomok, a bit like laing, only better, according to Gerry's Grill's website.  I know laing but it was the first time I heard of Tinomok.  It's a Bicol delicacy, and according to my brother, it's chicken wrapped in gabi leaves and cooked in coconut milk.  I believe it's basically the same as the Ilonggo's Pangat, but instead of chicken, pork or dried fish (usually labahita) is used.

Twisted buttered bread

Got them from The French Baker---all I did was reheat them before serving.:p

Kinilaw na Dilis


My cousin Mark's specialty--kinilaw na dilis (anchovies salad).  The raw, deboned anchovies were marinated in coconut vinegar for a few minutes then lightly squeezed to take excess vinegar.  Then the fillet was tossed in coconut milk, onions, ginger, kamias, tomatoes, black beans and crushed peanuts.  Spicy chili is optional.  This was a scrumptious appetizer over bottles of beer and kwentong barbero with my cousins.

Drunken Shrimps


Drunken shrimps or Nilasing na Hipon---a perfect match to an ice cold Tanduay Ice.  The shrimps were cooked in beer, battered and deep-fried, and served with garlic-vinegar dip.  This was at a girls' night out in Masas-Greenbelt 2.

My sweet camote


You can always tell when I'm on diet--I got a hungry look on my face.:p  Recently, a friend told me that camote (sweet potato) is a good substitute for rice so I bought a kilo to try it out.  But boiled camote and sinigang na baboy?    It's a weird combination.  Grilled fish and boiled camote---they just don't taste good together.  I ended up eating boiled camote with my coffee, and my nephew said he feels sorry for me!   So I mashed it (with feelings :p), added some condensed milk and grated cheese on top and chilled it.  It was a hit!

Killing Me Softly


Foodies are continuously finding ways of reinventing dishes.  I call this salad "Killing Me Softly"...it's not new, really.  This is your humble Ensaladang Talong (eggplant salad) with chicharon (pork cracklings) on top.  It's a vegetable dish---pretend the crunchy chicharon is just a figment of your imagination.:p

Beef Pacham


This is something I concocted and my nephew called it Beef Pacham (patsamba).  It's marinated beef strips in salt, black pepper and soy sauce sauteed in garlic and onions.  Beef strips were cooked in the marinade until tender, added oyster sauce.  Added carrots, corn kernels, green peas and red bell pepper---aside from the fact that the mixture added texture, it also made my beef pacham colorful.  And it wasn't bad at all.:p
